Today's sampling is Brasserie de Silly's La Divine Tripel. I've been told that it's not entirely quite to style but that I should enjoy it! Anything Belgian.. I'll almost always enjoy!From the notes: Deep amber coloured and hazy with rich aromas of toasted chestnuts, black raisins and pumpernickel bread. Complex flavours of dried apricots, toasted rye bread and pine. Creamy, smooth with an alcoholic warmth and medium finish. 9.5% ABV / 29 IBU
Appearance: Immediately as I start pouring I noticed that the colour is much different than what I was expecting - I expected a cloudy, kind of golden bodied beer, while this one is a deep copper-brown body with minimal amount of clarity to it. There's an abundance of light coloured beige head on top that's thick and frothy, takes a moment or three to diminish, which leaves behind a bit of a layered lacing on the glass.
Aroma: Quite sweet, malt forward with notes of caramel, raisins, a hint of earthiness to it, citrusy hop presence at the end.
Taste: Sweet with a deep caramel flavour to it. There's definitely a bit of a boozy burn from the beer but that should be no surprise at 9.5% ABV. Lots of Belgian spiciness to it that I didn't get in the aroma - clove, a hint of coriander, but also getting a sharp rye-like spiciness that was noticed in the tasting notes. There's a bit of a raisin flavour in there, and that's pretty much it.. lots of flavour but not overly complex. The aftertaste is a a slight spiced note with a hint of raisins to it.
Overall Thoughts: Not exactly what I'm used to as a Tripel but 100% enjoyable. Full on flavour and lots of Belgiany notes that most Belgian ale fans should absolutely enjoy. Merci Gary et la Brasserie de Silly pour cette bière!
